Green Goddess Tahini Dressing

Happy Tuesday!

One of my favorite quick recipes to spice up any dish is this Green Goddess Tahini Dressing from Shalane Flanagan’s “Run Fast. Cook Fast. Eat Slow.” recipe book. It’s quick, easy, and can be made up with most of the ingredients you might already have in your fridge. I love this one because it’s a good source of healthy fat with the yogurt and tahini. I like it drizzled over a rice bowl or salad, but it’s a thick consistency, so also great as a dip. Shalane’s cookbooks are awesome. Simple recipes with minimal ingredients for great recovery or just a healthy meal!

Recipe:

½ cup of whole milk yogurt

½ cup basil leaves

¼ cup parsley leaves

¼ cup tahini

2 tablespoons lemon juice

1 clove garlic

¼ teaspoon of fine sea salt

If I want it to be a dressing and a little more runny,

I’ll actually add a splash of water to thin it out and it’s perfect. Enjoy!
